Background |
Mr. Tharet Khongmi opened a noodles restaurant named “Pui Keng” in Sam Rong, Samut Prakan. The business went very well. He had an idea to produce seasonings for noodles. First, the seasonings were used in his restaurant. Later, as customers like his seasonings and buy them home. The restaurant’s seasonings received the first prize of Thailand’s First Golden Plate Award in 1992. |

Procedures |
- Wash and select soy beans. Steam the selected ones. - Mix the soy beans with flour and yeast. Leave them for about 72 hours. - Then, leave the soy beans in salted water for 60 days. - Boil the fermented soy beans. Add sugar, salt and corn flour. - Filter the mixture. |
