Background
Pak Nam Krasae is located near the sea so the fishermen can fish anchovy throughout the year. They process anchovy as crispy seasoned fish or fried fish with sesame. The group further developed its product into fried fish with herbs added. Among herbs used are leech lime leaves, lemon grass, and garlic.
Manufacturing Procedures
Shred sun-dried anchovy. Then, put it in water and sun dry again. Fry and season sun-dried anchovy. Roast in dry heat for 4 hours.
