Background
Residents in Huang Nam Khao bordering Siam Gulf are fishermen or fruit growers. There are a lot of tamarinds grown in this area. Therefore, the group processes tamarinds and shrimps – local products – to be chili paste using Trat chili which smells good.
Manufacturing Procedures
1. Pick tamarind seeds out. 2. Boil shrimps for a while.3. Mix tamarind, boiled shrimps, chili, onion, and garlic. And grind all the ingredients. 4. Fry the ground ingredients. Add fish sauce, sugar and salt. 5. When it is done, leave the chili paste cool down. Put it in jars.

The tamarind makes chili past sour and able to be kept for a long time without preservatives.
